Bacon and apple- oh my!

I awoke yesterday morning to the smell of bacon wafting up from the kitchen. Not having any idea about what kind of muffin I should make, I toyed with the idea of using the leftover bacon from breakfast. Rick was completely on board. We decided that a corn muffin recipe would be the perfect base (and of course my mom had sent me the perfect one) and he suggested I add some chopped apples to add to the flavor and texture. Flour, corn meal, sugar, eggs, milk, butter, and a touch of cinnamon combined with the apples and bacon made for one freaking delicious muffin.

(Everyone was confused when I handed them the "vegetarian" tray, aren't all muffins vegetarian?! Not when Allison the baker is in the kitchen!)

A super duper fancy cake was also on the docket for yesterday as it was one of the Charlotte, a directors, birthday! Everyone banded together, similarly to Sofie's birthday, except we all made her friendship bracelets so her arm would be covered! We surprised her at breakfast with a plate full of them :)

If you remember from last month, I made Sofie an amazing birthday cake- my famous raspberry buttermilk cake with crème fraiche. For Charlotte, I wanted to make something different and equally delicious. My first brilliant idea was a no-go because it wasn't exactly RBA (Rockbrook Appropriate) so Rick and I put our heads together and decided that tiramisu would be perfect. Thursday I made the lady fingers and yesterday I made the mascarpone cream and espresso syrup (made from Rick's freshly roasted espresso beans)

I layered the mascarpone cream (egg yolks, sugar, marsala, and almond extract), lady fingers, and then the espresso syrup (espresso, chocolate chips, brown sugar, white sugar, lemon juice, and some lemon zest) 3 times before finally topping it with whipped cream and a dusting of cocoa.

We brought the cake out at lunch time and bombarded Charlotte with songs, even the UPS guy stopped in for a quick 'hello!'

Oh, and as if all the singing, candy, friendship bracelets, and cake weren't enough-- she was even given a life size portrait of herself! Hope you had a wonderful Rockbrook birthday Charlotte Page!
