Taste Test Tuesday

Another Edition of Taste Test Tuesday! Today I am bringing you a Hawaiian inspired muffin, I hope you enjoy! Luau Muffin

(This recipe makes 24 muffins, but it can be cut in half if you don't have company to gobble them all down)

2 c all-purpose flour

1 tsp salt

2 tsp baking soda

1 c butter - softened

2 c sugar

2 ripe or over-ripe bananas

4 eggs

1 c chopped walmuts

1 c shredded coconut


1. Pre-heat oven to 350F. Line a muffin pan with paper wrappers and lightly spray with Pam, just for some insurance. Mix the dry ingredients together- flour, salt, and baking soda. Set aside.

2. Combine the softened butter and sugar in a mixer and beat until fluffy. Beat in the eggs until just incorporated. Add the bananas, walnuts, and coconut.

3. Slowly add the flour into the wet mixture and beat until just combined. Fill the muffin wrappers 2/3 full (I filled mine a little high and had some overflow).

4. Bake muffins for 20-25 minutes until a toothpick comes out nearly clean (mine got a little toasty but I'm never one to turn down a crispy muffin!)
