Taste Test Tuesday

I took a break last week because I wasn't in the mood to cook but I'm back this week with another delicious cookie recipe!! Ingredients:

2 sticks salted butter - softened

1 cup white sugar

1 teaspoon white vinegar

1 teaspoon baking soda

1 teaspoon almond extract

1 1/2 cups AP flour

1 cup chopped nuts (I used a mix of peanuts and pecans)


1. Preheat the oven to 325F. Cream the softened butter and sugar in a mixer.

2. Add the vinegar, baking soda, and extract to the bowl mixing between each addition until just combined. 

3. Scrape down the sides of the bowl and make sure everything is mixed thoroughly before adding the flour. Add the flour all in one go and mix until just combined. Then add the nuts. 

4. I used my mini ice cream scoop to scoop out 1.5" balls onto a lined cookie sheet. Bake for about 18 minutes until golden brown. 

5. Enjoy!

These are a quick and easy, 1-bowl cookie to make that also tastes delicious. The vinegar reacts with the baking soda to make them rise and spread out- it's not a flavor enhancer, I promise ;)  You can substitute the almond extract for pretty much any other extract and sub the nuts for other add-ins like rum extract with mini chocolate chips or coconut extract with toasted almonds. You get the idea. It's pretty versatile and it literally took me 5 minutes to whip up. This recipe makes about 3 dozen thin crispy cookies and it is the perfect amount because they are so rich.
